The sanitation shift runs long, floors and belts still feel slick after the wash, and the same spots keep coming back on inspection.
Animal fat and cooked-on product need heat to release, and plenty of plant washers run cold or lose temperature as soon as the trigger opens. Indoors you can't run an engine, and every gallon you spray is a gallon your drains have to handle.
A long sanitation shift pushes back the start of production. A spot that fails inspection holds the line until it's cleaned again, and a floor that stays greasy is where people get hurt.
The shop asks what you're cleaning (stainless, belts, floors, drains) and how many wash points you need. It asks what power you have, voltage and phase, whether the plant already makes hot water, and whether a flame is allowed in the room.
Where no flame or exhaust is allowed, an all-electric machine fits. The Alkota All Electric heats with immersion heaters, runs on 240 or 480 volt three-phase, and is smoke- and fume-free, 2 to 4 GPM up to 3000 PSI. If the plant already has hot water, the Hotsy 1700 is a stationary electric unit, available in stainless, with a hot-water seal kit that accepts incoming water up to 180 degrees, which the brochure calls an important feature for food processing, per the manufacturer's 2016 brochure. The Optima steamer comes in stainless models for food and beverage, uses a fraction of the water, and cleans without chemicals.
Carbochlor is the detergent Hotsy makes for food preparation areas. Verde All Purpose is the green cleaner for everything else.
