Grease baked into hoods and ducts, and a washer that only smears it around

What you see

The filters come out clean, but the plenum and the duct walls keep a tacky layer of grease. Jobs run past the hours the restaurant gave you, and the next service finds it thicker.

Why it happens

Cooked-on grease lets go with heat, and a cold-water washer, or a hot one whose burner can't keep up, only pushes it around. Then there's the runoff. Many cities restrict grease water reaching the storm drain, so ask yours what it requires. A rig with no way to catch the water leaves you a mess behind the building.

What it does to you

A kitchen that fails its next inspection calls someone else. Long jobs eat night hours you priced for a shorter job, and a grease-water spill behind a restaurant has your company's name on it.

The shop asks how many hoods you do in a night and how you get water on the job, the restaurant's hose or your own tank. It asks how you catch the runoff today, what you run now, and what goes wrong with it on a typical job.

What usually fits is a hot-water machine that rides on a trailer or truck. The Hotsy 1200 runs a gas engine with an oil-fired burner, 4.5 to 5.6 GPM at 3000 to 4000 PSI, and is built to adapt to trailer mounting, per the manufacturer's 2016 brochure. The All American Dominator is the compact one, 3.0 to 4.0 GPM, built to fit on a trailer. Some kitchens are better served by steam: the Optima steamer uses a fraction of the water and leaves no wastewater runoff, which matters when there is nowhere for the water to go. A trailer rig like the AWW-HDS5 on the UTS230 carries 230 gallons, so you are not waiting on the restaurant's spigot.

For the grease, Ripper I is the heavy-duty degreaser, and Citrus Clean is a booster you add to it. Ask on the call about vacuum recovery for catching the water.

Tell us what's going wrong

Grease baked into hoods and ducts, and a washer that only smears it around

A dead burner, a citation, a bid due Friday. Your words.
How do we reach you? A phone or an email is enough.
A few more questions (optional)
Downtime, labor, a lost bid. A rough idea is fine.
Brand, model, age if you know it.

Here's what happens next: The Pacoima counter calls you within one business hour. The call is 15 minutes. We ask what's going wrong, how you plan to pay, and who else weighs in. At the end we set a next step, or tell you straight that we're not the right shop. Nobody pitches anything until we understand the job.

Rather just talk? Leave a number.
